my favorite school snack is peanut butter pancakes. we make it at least once a month with all the kids taking turns mixing, pouring the flour, breaking the eggs and what not. the classroom sometimes gets messy and the sink is unimaginable but i love how they're so happy whenever i cook them pancakes. it's the best feeling in the world.
so here's my heart warming recipe if you ever wanna make this for a special someone or just to try something different.
Peanut Butter Pancakes
you'll need:
2 eggs
1/4 cup honey
1/2 tsp. vanilla
1/2 cup peanut butter
3/4 cup fresh milk
1 cup flour
1/4 cup powdered milk
1/2 tsp. salt
2 tsp. baking powder
Mix all the wet ingredients first before adding the dry ones. Try to stir the mixture in one direction until smooth. Take about a laddle full of the pancake mix and slowly pour it into a medium hot pan which is slighty greased. Butter is good but if you don't have any, about a teaspoon of cooking oil should do the trick. Work with a teflon pan if you can. The secret to fluffy pancakes is to leave them cooking on one side until you see alot of bubbles coming up on the uncooked side. Flip it over only when you're sure that the other side is cooked. It should look quite brown. Do not keep flipping it over as this will make tbe pancakes deflate.
Serve hot and enjoy!
